Chocolate Banana Bread

This choco-banana bread is sugar, dairy and gluten free, and it's just what we need after all that sugary stuff we have eaten over the holidays. I found this recipe over at The Whole Food Diary, on their Instagram feed. All the ingredients were already in my cupboard so I just couldn't wait to try this one out! The only problem was that my bananas were not ripe as the recipe suggested, so I needed to wait a couple of days longer. Which was really hard, but I need to practice my patience :)
Finally, the weekend has arrived, bananas were perfectly ripe and the rain was pouring outside. The perfect setting for baking was here!
The result was delicious, the cake is so moist and full of flavour, you need to try this one out. 



Ingredients
  • 3tbsp coconut oil
  • 4 mashed bananas
  • 2 eggs
  • 1 1/2 cup almond meal
  • 1/2 cup cocoa
  • 2tsp baking powder
  • 1tsp cinnamon
  • 1tsp all spice
  • pinch of salt
  • 1/2 chopped dates
  • nuts of your choice (almonds, walnuts...)
If you think that this is not going to be sweet enough for you add a few tablespoons of honey.

Beat coconut oil and mashed ripe bananas in a bowl, add two eggs, fold in almond meal and cocoa, cinnamon, all spice, pinch of salt and baking powder. Finely chop 1/2 cup of dates, add them to the mixture and mix until combined. Pour the mixture in a bread tin, top with sliced almonds, walnuts, peanuts...and bake at 175oC for approximately an hour.

Ovaj kolač od banane i čokolade mi je pravo otkriće! Inspiraciju mi je dao par koji ćete naći na njihovoj The Whole Food Diary stranici ili na Instagramu gdje ih pratim. Kako ne sadrži brašno već puno banana i datulja, kolač će ispasti jako guste i vlažne teksture, što je super jer danima postaje sve bolji. Uz čaj ide savršeno, a kao doručak još bolje. Sljedeći put ću se poigrati s rižinim ili kokosovim brašnom umjesto bademovog pa vam javim rezultate. 

Sastojci:
  • 3 žlice kokosovog ulja
  • 4 zrele banane
  • 2 jaja
  • 160g bademovog brašna ali grublje mljevenog, znači najbolje da sami usitnite bademe u sjeckalici
  • 50g kakao praha
  • 2 žličice praška za pecivo
  • 1 žličica cimeta
  • 1 žličica začina za medenjake (ako imate)
  • prstohvat soli
  • 80g datulja
  • orasi, bademi, kikiriki...po izboru
Ako mislite da vam ovo neće biti dovoljno slatko dodajte još koju žlicu meda.

Izmiksajte banane zajedno sa kokosovim uljem, dodajte dva jaja, pa na najmanjoj brzini umiksajte kakako, cimet, prstohvat soli, prašak za pecivo i bademovo brašno. Isjeckajte datulje što sitnije pa ih umisajte u smjesu. Izlijte u pripremljeni kalup koji ste obložili papirom za pečenje pa posipajte oraščićima po izboru.
Pecite na 175oC otprilike sat vremena, u orginalu piše 45min ali meni je kolač bio potpuno sirov u sredini pa sam produljila još sigurno nekih 20ak minuta. Pustite da se ohladi na sobnu temperaturu pa servirajte uz omiljeni čaj :)
